Eggplant out
Ingredients: Medium size eggplant 400 gms, 1 cup of mustard oil, half a cup of sour curd, 2 tablespoons of onion paste, 1 teaspoon of garlic paste, 1 teaspoon of ginger paste, 1 teaspoon of turmeric powder, 2 teaspoons of sugar, 1 teaspoon of almond paste Table spoon, 1 teaspoon of Panchforan powder, 1 teaspoon of chilli powder, half a cup of crushed onion, 1 tablespoon of crushed coriander leaves, according to the amount of salt.
Method: Slightly chop the eggplant and apply a little salt, turmeric and chilli powder on the skin. Now heat oil in a pan and fry the onion until brown and add all the bata and powder spices. Cover the lid with eggplant and cook over medium heat. Occasionally a little water should be sprinkled so that the spice does not burn. Yogurt, sugar and almonds should be mixed together, put in eggplant for a while and put down with green chillies and coriander leaves.
Once the spices have been seasoned, cover with eggplant paste, cover with capsicum and tomato pieces and cook over medium heat.
